Lamb Shanks and Pink Mash

Well, the weather is still awful and I think staying inside too long has made me a little stir crazy because tonight I made pink mash! I am always looking for ways to get in more servings of vegetables so I like to think about what the girls will eat and work from there.  I used [...]

Pork Ragu with Fettucine

On a winter weekend I love to make a slowly cooked dish.  Something you can put into the oven on a low heat and leave for 3 – 4 hours.  There is nothing more comforting than the smell of a sensational meal filling the house as wild weather rages outside.  This weekend Auckland experienced a massive storm that [...]

Teriyaki Chicken Nuggets

I’ve often wondered which part of the chicken is the nugget, just as I’m pretty sure fish don’t have fingers!  However, children often enjoy the texture of more finely chopped meat so here is my take on the nugget……

Ingredients
1 boneless and skinless chicken thigh (makes 6 nuggets)
1/2 small onion (approx. 1 tablespoon)
4 green beans
4 tablespoons toasted [...]

Spinach and Cottage Cheese Pasta Bake

As previously posted both of my girls love pasta.  In fact they would eat plain pasta as their meal if I let them.  So I devised this extremely simple recipe that takes pasta and bakes it with cheese and other goodies!  This makes an excellent lunch or it can be served as a side to [...]

Date Night Nabe

Not all the food I make is about what children like to eat.  In fact, when I get the chance it is very much about what I like to eat and there are two types of cuisine that I really enjoy – Japanese and Italian.  So the other day when I was driving past a [...]

Chicken Pie

Anything wrapped in pastry is appealing to my girls and this Chicken Pie has certainly become a popular dish.  However, I have also had success with this filling served with pasta, rice or under a potato crust.  The mixture is pretty straight forward and doesn’t take long to cook.  You could always make extra filling [...]

Saturday Night Pasta

When I have a little more time to make a meal it’s fun to get the whole family involved in pasta making. If you’ve never made your own pasta there is a knack to it but once mastered you will never look back.  The finished product is so unlike any store bought fresh pasta that it really [...]

Chocolate Dip with Fruit

This isn’t really a recipe but an idea for an easy dessert with fruit.  I take some compounded chocolate, approx. 50 gms per child and melt in the microwave on the defrost setting for 3-4 minutes.  After each minute of heating I stop and check on the chocolate and as soon as the chocolate can [...]

Sang Choy Bow

This is one of the girl’s favourite meals and one of mine too.  It is so quick and easy to prepare and it is something that both children and adults can enjoy.  I think part of the joy of the dish is being able to add your own touch to the mixture that gets rolled [...]

Pumpkin Soup with Cannellini Beans

When the girls first started to eat solid food they used to love pureed pumpkin and now that they are bigger they love pumpkin soup.  It’s such a good way to hide a lot of vegetables!  In the winter we quite often have a small bowl of this soup to start with and then if they [...]
